Salvia officinalis, synonyms are garden sage, true sage and Dalmation sage.

Small and evergreen shrubby perennial with woody stems near the base and herbaceous ones above much branched. Up to 1 meter high and native from the shore of the Mediterranean sea, fits perfect with its climate. By steam distillation the essential oil is obtained using the dried leafs. The oil must be extracted on June-July.
